 Paul Bunyan Burgers ~Jody
 
1 lb. ground beef
2 eggs
2 T. Worcestershire
1-1/2 t salt
1/2 t garlic salt (or powder)
dash of pepper
ketchup
pickle relish
chopped onion
cubed cheese
 
Mix first 6 ingredients well.  Divide into 4 parts (or more if you want smaller portions).  Pat each portion of meat out on waxed paper to form about a 9" circle.  Spread with ketchup, leaving a 1" margin around edges.  On half  of each circle, put relish, onions, and cheese.  Lifting  waxed  paper, flip unfilled half over filling.  Seal edges making sure they are thick.  Grill over low heat to desired doneness.
 


Grill- Side Garden Salad   ~Joyce U.

2 medium tomatoes, chopped ( about 2 cups)
1 medium zucchini, diced ( about 1 cup)
1 medium gray Mexican squash, diced ( about 1 cup)* my addition for more color and variety
1 cup frozen whole kernel corn, thawed
1/3 cup thinly sliced green onions with tops
1 small ripe avocado, peeled, and coarsely chopped
1/3 cup Pace picante sauce
2 T. vegetable oil
2 T. chopped fresh cilantro or parsley
1 T. lemon or lime juice
¾ tsp. Garlic salt
¼ tsp ground cumin


Combine tomatoes, squash corn, green onions and avocado in a large bowl. Combine remaining ingredients; mix well. Pour over veggies and mix gently. Chill 3-4 hours, occasionally stirring gently. Serve chilled or at room temp. with additional picante sauce. Makes 4-6 servings ( about 4 cups salad)

 


Grilled Stir Fry  ~Jody

2 lb. strips of sirloin steak or chicken

Marinate for 1 hour in:
1 c. Allegro Marinade or 1 c. teriyaki sauce
1/4 c. olive oil

Vegetables (your choice):
chopped broccoli
chopped cauliflower
onions, stripped
red, orange, or green bell peppers, stripped
zucchini, sliced
carrot, sliced thin
mushrooms

Mix about 1/2 c. olive oil, 2 cloves garlic (minced), salt and pepper to taste and pour this over your bowl of veggies. Toss to coat them evenly. Set aside.

Pour out marinade and take meat to the grill. In a well-oiled grill wok, toss meat in and cook on high heat until desired doneness. Remove meat and toss in the veggies. Grill until tender-crisp and add meat to heat through. Serve over hot rice or chow mein noodles or eat "as is." You can also do a *veggies only* side dish to compliment any main course meat.


Kabobs  ~Jody

Thinly stripped meats (beef or chicken)  marinated in your favorite sauce or soy sauce plus 1/4 c. oil for 1/2 hour or more.  Ribbon meats onto kabob skewers.  Grill over medium heat, turning constantly until desired doneness.  You can also make vegetable kabobs by marinating chunked veggies as mentioned and then stacking them onto kabob skewers.  Grill as before until tender crisp.


S'mores
I'm sure that everyone knows about how to make s'mores, but just in case it's new to you, here's the simple dessert recipe.

1 bag jumbo marshmallows
6 Hershey's candy bars (plain)
1 box of graham crackers

When the coals of the fire or grill are low-burning, let the kids get some thin sticks and poke a couple of marshmallows onto the ends. Then they can put them over the coals to toast until they're golden-brown. Put one half of a Hershey Bar onto a graham cracker, then add the hot marshmallow on top. Add one more graham cracker on top of the marshmallow and squeeze down gently. Eat like a sandwich.
These yummy treats ooze with goodness, so make sure everyone's eating them outdoors.
