Biscotti and Other Cookies from Jody's Kitchen.....


Speckled Biscotti

4 ½ c. flour
1 t. baking powder
½ t. soda
½ t. salt

Combine these dry ingredients and set aside.

1 ½ c. sugar
2/3 c. vegetable oil
2 eggs

Beat this together in a large bowl. Next alternate adding dry ingredients with....
½ c. sour cream

When mixed together, knead in...

½ c. chopped pecans (toasted) or any other nuts of choice
½ c. semi sweet chocolate chips (minis are great)

Divide dough in 3 portions. Shape into logs 14” long. Place far apart on large greased cookie sheet. Brush with....

1 egg yolk whisked with 2 t. water
Sprinkle logs lightly with sugar

Bake in 350* oven for 30 minutes. Cool 30 minutes on cookie sheets. Cut on cutting board in diagonal ¾ inch slices. Place slices on ungreased cookie sheets. Bake cookie slices at 300* for 15-20 minutes or until firm. Cool on wire racks. Store in airtight container up to 1 week or freeze up to 1 month. Makes about 4 ½ dozen. Great for dipping into coffee or tea.


Best Sugar Cookies Ever! ... from my Mom's recipe box.
1/2 c. butter
1/2 c. margarine
1 c. shortening
1 c. powder sugar
1 c. granulated sugar
Cream the above and add:
2 eggs
1 t. cream of tartar
1 t. soda
1 t. vanilla
4 c. flour
Mix thoroughly. Chill dough about 2 hours and then roll out 1/4" thick for cutting cookies. Cut out shapes. Bake 8-10 minutes on ungreased cookie sheet just until edges are barely getting golden. Cool and frost with powder sugar, milk and vanilla glaze and sprinkle with colored sugars. A family tradition at Christmas! We also make these by rolling dough into 1" balls and flattening with sugared glass or sprinkling with colored sugars before baking. Makes about 4 dozen.


Katie's Chocolate Chip Cookies....our family friend's best recipe and now ours.

2 cups vegetable shortening
1 c. brown sugar
2 c. white sugar
4 eggs

Mix together thoroughly and add:
2 t. vanilla
1/2 t. salt
2 t. soda
5 cups of flour, added gradually
1/2 bag (12 oz.) chocolate chips (you may add the whole bag if you need a chocolate fix!)

Bake at 375* for about 10-12 minutes or until golden brown. Cool on wire rack. Makes about 5 dozen cookies.


Oh Henry! Bars  ~ A Courtney Ranch specialty
 
¾ c. margarine or butter
1 c. brown sugar
1 t salt
1 t vanilla
½ t soda
1/3 c. corn syrup or honey
2 c. oatmeal
1 ½ c. flour
 
Melt butter and then mix the rest together.  Press into a greased 9x13” pan.  Bake 375* for about 15-20 minutes or until golden.
 
Frosting:  ½ c. peanut butter & ½ c. chocolate chips.  Melt together and spread on warm bars.  (optional)  Another frosting variation is 1/2 c. peanut butter and 1/2 c. white chocolate chips.


Soft Molasses Cookies  A wintertime favorite ~Jody

½ c. soft butter
½ c. shortening
1 ½ c. sugar
½ c. molasses
2 eggs

Cream the above together and then sift together and add:

3 ½ c flour
½ t salt
2 ¼ t soda
2 t. ginger
1 ½ t cinnamon
1 t. cloves

Chill dough for 1-2 hours. Roll dough into 1” balls and roll balls in sugar. Place 2” apart on greased cookie sheet. Bake 350* for 10 minutes. Do not over-bake. Keep cookies in a covered container. Sometimes I add a slice of bread to keep cookies soft.
