This month we are featuring Crock Pot Concoctions. Being in the middle of winter, we want to enjoy some comfort foods that we can fix ahead and forget while we do more important things like read a good book, sew a quilt, or build a puzzle with the kids. Here are some favorites.


Chicken Ole’

12 tortillas, torn into 6-8 pieces
4 cups coarsely chopped cooked chicken or turkey
1 (10 3/4 oz) can cream of mushroom soup
1 (10 3/4 oz) can cream of chicken soup
1 (7 oz) jar salsa (pick your heat level :<)
1 cup sour cream
1 tbsp minced onion
1 1/2 cups grated cheddar cheese

Lightly grease sides and bottom of crock pot. Arrange alternate layers
of tortillas with chicken and mixture of undiluted soups, salsa, sour
cream and onion. Cover and cook on low 4-5 hours. Sprinkle with cheese
and cook on low another 15-20 minutes.

Joyce’s note: Quite honestly, I never seem to follow a recipe EXACTLY
(kind of like curriculum) so in the recipe, I put as much chicken as I
want, and I don’t mix up the soups, etc. before layering. I just spoon
the ingredients in layers. Doesn’t seem to hurt the taste any!

 

Creamy Sausage Stew

8-10 medium red potatoes, cut into 1-1/2 inch pieces
2 large white onions, quartered
1 large green pepper cut 1-1/2 inch pieces
1 large sweet red pepper cut 1-1/2 inch pieces
2 pounds smoked Polish sausage, cut into 1-inc slices (I always buy the Johnsonville brand)
1/3 cup cooking oil
1 Tablespoon dried basil
2 teaspoons salt
1 teaspoon pepper1 pint heavy cream
3 Tablespoons cornstarch
3 Tablespoons water  

Place potatoes in a 5 qt. roasting pan. Add onions, peppers and sausage; toss gently. Combine oil, basil, salt and pepper. Pour over the meat and vegetables; toss well. Cover and bake at 350 degrees for 45 minutes; stir. Add the cream at end of cooking; cover and bake 30-40 minutes longer or until potatoes are tender. Combine cornstarch and water and stir into stew. Place on stove-top and bring to a boil, stirring constantly until thickened. Yield 10-12 servings--makes great leftovers!! =-

Crock pot cooking--  Mix all but cream together and put in 5 qt. crock pot.  Cook on medium heat 5-7 hours or so, until potatoes are tender.  Add cream lastly and heat through. 

No Fuss Potato Soup

6 cups cubed peeled potatoes
5 cups water
2 cups chopped onion
1/2 cup chopped celery
1/2 cup thinly sliced carrots
1/4 cup butter or margarine
4 teaspoons chicken bouillon granules
2 tsp. salt
1/4 tsp. pepper
1 can (12 oz) evaporated milk
3 tbsp. chopped fresh parsley

In a large slow cooker, combine the first nine ingredients. Cover and
cook on high for 7 hours or until the vegetables are tender. Add milk
and parsley; mix well. Cover and cook 30 min. longer or until heated
through.

 

Chicken/Broccoli/Cheese Casserole

1 cup chopped celery
2 cups chopped broccoli

2 c. cooked rice  (I added this—Jody)
3 cups chopped cooked chicken
2 cans cream of chicken soup
1 1/2 cups mayonnaise
1 1/2 tsp lemon juice
curry powder
shredded cheddar cheese
1 cup bread crumbs
3 tbsp butter or margarine

Place cooked chicken on bottom of casserole dish.
Add celery and broccoli and rice on top.
Combine soup, mayonnaise, curry powder (to taste) and lemon juice in a separate mixing bowl.
Pour over chicken mixture, then shred cheese on top.
Cover with bread crumbs (I use seasoned croutons)
and top with melted butter or margarine.
Bake at 350' for approx. 1 hour
(mine is done in less time, so watch)
Serve with your favorite rice.
Enjoy!

Crock pot cooking:  Follow instructions and set crock pot to medium and cook for 2-3 hours.  Remember to grease crock pot!

Beef Stew    from Jody
3 lbs. stew meat or steak chunked
1 large onion
4 ribs celery, chunked
6 or 7 medium carrots, chunked
10 medium potatoes, chunked
2 t. salt
½ t. pepper
2 c. water
2 c. tomato juice or canned tomatoes
2 T. beef bouillon
Put in crock pot and get it cooking on high until bubbly and then reduce heat to low. Cook all day (checking moisture). Before serving, you may add a little corn, peas, beans (optional) and cook until tender.
To thicken: Mix 1 c. milk and 3 T. flour in container with lid. Shake vigorously and pour into hot stew. Heat through.


Barbequed Beef

1 large roast beef
1 ¼ c. water
2 c. chopped onion
 
Bake this at 325 for 3-4 hours in oven or 5-6 hours in crock pot. 

Pick apart the beef into pieces  using a knife and fork.
 
Sauce:.  Then add: 

reserved liquid from cooking roast
14 oz. ketchup
¼ c. vinegar
¼ c. brown sugar
2 T. Worcestershire sauce
1 t. dry mustard
salt and pepper to taste
 
Allow the beef to soak in the sauce above on low heat or allow it to cool in sauce and serve over buns.


Chicken on Sunday

2 c. dry rice
1 chicken, cut up (or pieces you desire)
2 c. chopped celery
1 can cream of mushroom soup
1 can cream of celery soup
1 package instant onion soup mix

In a greased crock pot, spread dry rice in bottom, cover with chicken. Mix soups together with 3 cans water. Pour over chicken and rice. Sprinkle onion soup mix over top.
Cover and cook on high for 4-6 hours. Check for moisture and add water if needed. May also be baked
in the oven for 2 hours at 350*.

*This may also be done with pork chops!

Pepper Steak

2 lbs. flank steak or sirloin steak, sliced in strips
2 beef bullion cubes
1 c. water
1 large onion, sliced
1 c. sliced mushrooms
2 green peppers, sliced
2 T. Worcestershire sauce
2 T. soy sauce

Put all into a crock pot and cook at about 300* for 1-1/2 to 2 hours or until meat and veggies are tender.
Serve over rice or on a hoagie bun.  May also make this with salsa in the mixture and serve in a tortilla with all the fixin's.

Beef and Noodles   from Jody

2 pounds round steak, chunked or stew meat
1/4 c. flour
salt and pepper
Toss steak in flour, salt, pepper and put it into a well-oiled crock pot.
Layer meat with:
1 medium onion, sliced

Then pour:
2 c. water
2 T. Worcestershire sauce over all. Cover and cook on medium for 5-6 hours or until meat is tender.
At the end of cooking, add 1 can cream of mushroom soup and 1 c. sour cream. Heat through and serve
over hot cooked noodles or rice.

Tips and Tricks!

Try some of these ideas for your crock pot too!

Your favorite Meatball recipe can be done in the crock pot. Put them in the pot raw with a little water. You may even like to add a jar of spaghetti sauce near the end of cooking and serve over spaghetti noodles. Your favorite meat loaf recipe can be done via the crock pot. Salisbury steak is just a version of a meatball only made into a patty. Put these into the crock pot raw and add some cream of mushroom soup or cream of chicken soup and a little water and cook on low.

I like to always grease my slow cooker before putting food in for easier clean up. I preheat my cooker  while I'm browning something. Often I start it on high and then turn to low when I add my foods.

I have tried doing crock pot dishes which include noodles with very little success. I think if you used a very thick pasta like an old-fashioned noodle, and added it dry to a stroganoff recipe with enough water, you might find it to work, but I find it's just too easy to boil noodles for 10 minutes and serve good meat over top.

REMEMBER:  Crock pots are all different.  Adjust the temperatures as you see fit.
