Spring Tea Party

Tea Recipes

Something I learned from Emily Barnes is that it is not the golden liquid which we sip from our cups at Tea Time, but rather the time of sharing with loved ones that is so special.

Cinnamon-Orange Tea

Boiling hot water

3 tea bags of choice (I like English Breakfast Tea)

3 slices of orange

2-3 cinnamon sticks

Put the three tea bags into a 6 cup teapot. Add the orange slices and the cinnamon sticks and then pour boiling water over all. Steep about 3 minutes and pour into tea cups. Serve with sugar.

Raspberry Tea

Boiling hot water

3 tea bags of choice

3-5 fresh raspberries per tea cup

sugar or honey

Put the three tea bags into a 6 cup teapot. Pour boiling water over and steep for 3 minutes. Put 3-5 raspberries in each cup and pour hot tea over. Serve with sugar or honey.

Pink Tea

(for those who do not like tea)

Pink lemonade

Fresh strawberries

mint (opt)

Prepare pink lemonade (either hot or cold) and serve with a fresh strawberry in each tea cup. If served cold, add ice, strawberries and a fresh sprig of mint.

Soups

In case you are planning a luncheon tea party, I've included a favorite soup.

  Broccoli Cheese Soup

4 slices of bacon

1/2 c. finely chopped onion

1/4 c. chopped green pepper (opt)

Fry bacon until crisp and remove from pan. Saute onion and green pepper in the bacon drippings. Add:

2 1/2 c. chopped broccoli and 1 c. water... Cover and simmer 5 minutes. Meanwhile, melt ...

1/4 c. butter in a 3 qt. saucepan and stir in...

1/4 c. flour, 1 t. salt, 1/4 t. pepper

Remove from heat and stir in...

2 1/2 c. milk and 1 T. worchestershire sauce. Return to heat and boil 1 minute, stirring constantly. Remove from heat and add...

2 1/2 c. grated cheese (Cheddar or American). Stir until melted. Stir in vegetable mixture. Heat before serving and garnish with bacon. Serves 6.

Sandwiches

Most tea sandwiches are very simple and many are made with cream cheese combinations. Below are a couple of our favorites.

Veggie Sandwich

Sliced white or wheat bread (without crusts) or with breads baked in tubes or cans.

Cream cheese

Any assortment of: Thinly sliced cucumber, bean sprouts, slivered carrot, red onion, tomato and sunflower seed meats.

Spread cream cheese on both sides of bread, sprinkle with sunflower seeds. Neatly arrange veggies in layers and cut sandwiches in wedges or shapes as desired.

Chicken Salad Sandwiches

Sliced white or wheat bread (without crusts) or breads baked in tubes or cans.

1 fully cooked chicken breast (or canned chicken)

1/2 t. lemon pepper

mayonnaise or salad dressing to desired taste

salt and pepper to taste.

Mix all the above and spread on sliced bread; cut into wedges or tiny sandwiches for finger food.

Mrs. B's Whole Wheat Carrot Cake
from Emilie Barnes "If Teacups Could Talk"


2 c. whole wheat flour (I like half white or use all white flour instead)
1 T toasted wheat germ
1 t. baking powder
1 t. soda
1 t. salt
1 t. cinnamon
1 1/4 cups honey
1/4 c. brown sugar
1 1/2 c. butter, melted
1 t. molasses
1 t. vanilla
4 eggs
3 c finely shredded carrots (easy in a food processor)
1 c. chopped pecans or walnuts
In mixer bowl combine flour, wheat germ, baking powder, soda, salt, and cinnamon. Add honey, sugar, butter, molasses, and vanilla; beat on low speed until combined. Add eggs one at a time, beating well after each egg. Then stir in carrots and nuts. Pour batter into bundt pan and bake at 350' for 35-40 min. or until toothpick comes out clean. Cool at least 10 minutes before removing from pan. Allow cake to cool completely before frosting.


Cream Cheese Frosting for Mrs. B's Carrot Cake
8 oz. cream cheese, softened
1 1/2 c. butter
2 c. powdered sugar
1 t. vanilla
1/4 c. chopped pecans (opt)
In mixer bowl, beat together cream cheese and butter until very fluffy. Then beat in remaining ingredients. Chill to spreading consistancy.


 

 

 

Little Cheese Cakes

24 vanilla wafer cookies

2 pkg. cream cheese

1/2 c. sugar

2 eggs

1/2 c. dairy sour cream

1/2 t. vanilla

Beat cream cheese and sugar. Add eggs one at a time and beat well between, add sour cream and vanilla last. Line muffin pans with foil laminated paper baking cups. Place one vanilla wafer in the bottom of each cup. Pour cheese batter over cookie until cup is almost full. Bake 15-20 minutes or just until set. Cool completely. May top these with canned cherry pie filling chilled. 24 cakes.

Hints and Tips for A Perfect Tea Party

Bake breads for sandwiches in decorative baking tubes, i.e. star, heart or flower. Or bake in cleaned and well greased vegetable cans filling them 1/3 full. Allow to raise and bake on cookie sheet as normal.

Garnish plate of sandwiches on bed of leaf lettuce and/or parsley sprigs.

Decorate plates with doilies.

Use specialty teas with individual strainers on each tea cup.

Have everyone bring their favorite tea cup and tell the story on how they received it or reason they purchased it.

Don't forget your table decorations. Make it formal! Centerpiece with fresh flowers and candle light. Cloth or linen napkins in rings with a fresh flower in the ring. Lace table cloth.

Water goblets with fresh lemon and a pitcher of ice water.

Use sugar cubes for this special occasion with sugar tongs. Some people enjoy cream in their tea, so be sure to have it available.

Music is a must! Instrumentals will not take away from the visiting... Select soothing music like "A Ride Through the Black Hills" or classics.

For you who are serving, making yourself scarce but be quick to pour another cup of tea or remove dishes. Be the servant for the day and show those you love how much you appreciate them. You will be blessed!

If it is a small gathering, be a generous and attentive hostess, but do sit and enjoy the party with your guests.

Not all tea parties need to be formal. Often just the fact that you took out the tea cups and a little something for your guest is enough to show them they are special.

Have tea with gentlemen. Our boys look forward to Sunday teas and it teaches them how to behave in a formal setting.
